Carrageen moss recipes

A variety of Irish seaweed found mostly on the southern shores. The extraordinary creamy-coloured fronds have natural gelling properties, making them a vegetarian-friendly gelatine substitute.

Soak carrageen moss overnight before using. It can be combined with cream, vanilla and sugar to make vegetarian and vegan panna cotta.
