Lazy Cook's Guide to Christmas
Savoury Gateau
SAVOURY GATEAU - serves 8-10 slices

INGREDIENTS
1 x 400 gms (1lb) loaf - brown or white, tin or cob 50 gms (2oz) butter or margarine - softened
150 gms (6oz) meat pate
4 hard boiled eggs
1 dessert spoon of mayonnaise
2 tea spoons of horseradish cream
200 gms (8oz) cream or curd cheese
1 small single cream or milk
freshly ground white pepper
spring onions
one lime
one orange
tomatoes - for garnish

METHOD
Peel and roughly chop the eggs before putting into a food processor or liquidiser with the remaining ingredients and process or liquidise to a paste.
Remove all the crusts from the loaf before slicing it horizontally into 3 slices of equal thickness.
Spread each slice with butter and sandwich together, then one slice with pate and the other with egg mayonaise mixture, so that it looks like one big sandwich and place on a serving dish.
Soften the cheese with a little cream or milk and season with freshly ground white pepper (and a little chopped parsley if you want) and cover the loaf with this.
Garnish with the suggested ingredients ie: spring onions, lime and orange slices and use the sliced tomatoes for the top knot.
Slice to serve.
