TURKEY
& MUSHROOM BAKE - serves 8-10
INGREDIENTS
800gms (2lb) cooked turkey - broken into mouthsized pieces
50gms (2oz) butter
10ozs milk
2 teaspoons mushroom ketchup
freshly ground black pepper
400gms (1lb) mushrooms - wipe and slice
50 gms (2oz) plain flour
20oz stock |
METHOD
Set oven to gas mark 6/450f/200c/Aga roasting oven.
Put the turkey into an overproof dish.
Melt the butter in a large pan with the milk.
Add the mushroom, ketchup, pepper and sliced mushrooms, stir
and simmer until the mushrooms have softened.
Mix the flour to a smooth paste with cold milk and stir into
the mushroom mixture with the stock.
Stir until boiling then simmer until it thickens.
Add more stock if the sauce is too thick (it should be the
consistency of thick gravy).
Pour over the turkey and bake, covered until hot and bubbling.
This recipe can be prepared in advance of serving, cover and
store in a fridge. Cooked sausages or ham can also be added
with the turkey. |
