Finery and display are again on show at the International Riding School in Jerez, where Inka watches a breath-taking exhibition of skill from both horses and riders. She discovers the Andaluz passion for horses when she talks to one of the most senior riders.

From the partying of the Feria, Robert heads south for the peace of one of Europe's largest and most important natural reserves - the Coto Doñana, famous for its birds. Inka also visits the Coto, but has her very own guide - none less than Mauricio González, head of the González Byass sherry dynasty, who has life-long connections with the Coto.

Robert and Inka end their journey though Southern Spain just across the river from the Coto, in the port of Sanlúcar de Barrameda. While Inka samples the famous local 'manzanilla' sherry, Robert watches a local speciality being prepared in the kitchens of Casa Bigote, one of his favourite seafood restaurants.

As they sit down to eat, Robert and Inka agree that the combination of food and wine may explain Sanlúcar's reputation for being the happiest town in Spain.
