This is my first post here so this topic may have been covered, but does anyone have an elderflower cordial recipe preferably using citric acid? TIA.

Two pints of elderflowers - just trim off the main stems and push into a measuring jug to get "two pints" worth.
A 1kg bag of sugar.
Two teaspoons of citric or tartaric acid.
If you fancy it, juice and zest of a lemon.
Put all the ingredients in a bowl and pour boiling water over enough to cover. Stir to dissolve the sugar.
Cover for 24-48 hours then strain into screw top bottles. (I save little plastic drinks bottles )
Store in a very cool place.
Once a bottle of cordial is open it needs to be used within a week or else it can go mouldy.
