Hello all. My son has given me a load of sundried tomatoes and garlic he bought at an Italian market. Can I have some suggestions please as to what can I make with them?

pizza sauce - blitz them with some garlic, leave them to simmer and reduce a little, add some basil and then spread to the pizza base as normal
or I have blitzed them with some fresh toms, garlic, chilli and basil, cooked down for a pasta sauce - slightly richer than a simple tom sauce.
otherwise I chuck em in salads!

i love sun dried tomato bread, especially with home made soup, mum eats them straight out of the jar!karen

I use them to add a bit of richness to tomato and basil soup, I also chop a them up and add them to a veggie and lentil chilli and I always throw a few in when I'm making a pasta sauce.
If they're the ones in oil they're nice in a couscous or quinoa salad and I really like them in a cheese and onion toastie.

Thankyou for that. Didn't occur to me that I could make a sauce out of them! Do you know if they can be frozen?

If they're packed in oil they'll keep for ages, anyway, but if they're dry-packed I freeze them and throw them in soup or pasta sauce from frozen. Never had any problems yet.
