So if one of these things hits us... what happens? is it just a case of 99% of the population dying off, or would it destable our orbit enough to make earth permanently uninhabitable?

Lots of different theories... and, above all, it just depends on the size of the object. Little things are more survivable, larger things less, the largest things not at all. Pretty simple, really.
