Thanks for an informative entry.

One question though, since the scriptures say that passover is supposed to include lamb, why is this not included in the Seder ?
(only a leg bone, without meat)

The lamb is for the Karbon Pesach, or Pesach sacrafice. Since sacrafices could only be given when the Beit Hamikdash (Temple) was standing (except at a few other permissable times, like when they only had the Mishcan [tabernacle]), we do not eat lamb at the Seder today because it might look like we're giving the sacrafice, which is forbidden at this point in time.
