I've heard the Limoux people claim to have invented the method used in Champagne. They make a wonderful version in a little Languedoc town called Bessan, and sell it for €5 a bottle ::sigh:: I agree that the better the wine the less harm it does to the head. Well done Gnomon! Pop! I drank red wine and cava like it was water in Spain and suffered nothing for it. I get back to the States and take two sips of champagne or cava or red wine and get a horrible headache.
