Beets. I used to hate them! Here's a Canadian Prarie Recipe sure to convert beet haters into Beet lovers

2 qrts. beets
1/2 cup white vinegar
1/2 cup Balsamic vinegar
1 3/4 cups brown sugar
2 tbsp. dry mustard
1/2 cup flour
1 1/2 cups water
1 tsp. sea salt

Cook beets (in skins) until tender. Cool. Peel off skins and and dice into bite sized peices. Heat sugar, salt and vinegar to boiling. Add diced beets, heat thorouhly. Make paste with mustard, flour and water, add to beets, cook until thickened, Stir often. Pack into sterilized jars and seal. Makes about 9 250ml jars. enjoy!
