Timing for larger quantities

I made double this mixture which took away the QUICK factor as it took over 2 hours for the hot fruit liquid to cool but the end results were fantastic (still EASY) this amount filled 1 7 inch round loose based tin and a muffin tray for 6 deep muffins, I am making mini Christmas cakes to give as gifts.biggrin
