why is this called Pepper Cake?
It hasn't got any pepper listed as an ingredient - and it doesn't sound *that* spicy/hot to me. Just a bit gummity.

1. During the Middle/Dark Ages the recipe did actually include pepper.
2. 'Pepper' was used as a common name for any kind of 'foreign' spices. The recipes I've seen myself usually contain cinnamon and ginger as well.
