A Guincake is made following the exact recipie and procedure for a normal pancake, but replcing half to all (depending on taste) of the milk with Guinness stout! What you get is a dark, slightly more stodgy pancake with a rich flavour, perfect for cheesy fillings or creamy mushroom. Guinness original is best for this rather than the draught variety.
P.S. It recently occured to me that, as pancake mix is roughly identicle to Yorkshire pudding mix, a GuinnYorkshire may be a good idea, and possibly GuinnToadInTheHole. Here is the recepie that worked well for me yesterday.

----Basic ammounts----
1cup flour (plus 1 heaped tsp mustard powder) 1 Tsp salt 2 eggs 1 & 1/4 cups milk/guiness 1 medium onion, diced 6-8 Sausages
----Basic method----
sift flour in bowl with salt and mustard powder make a well in the middle put eggs & some of the milk/Guiness in the well whisk and stir in rest of milk/Guiness keep whisking till bubbly on surface
Preheat oven to gas 8 with a greased shallow casserole dish on middle shelf Fry sasages on low hob in very little oil until browned place on kitchen roll to soak up excess grease Place onion in preheated dish Lay sausage (chopped into small chunks, ?thirds?) on the onion bed Pour on mixture, trying to cover some of the sausages cook on gas mark 8 for 10 mins reduce to 6 and cook for 30 mins
