I'm no expert (but I have made the biscuits - it's my mum's recipe) but I think that egg whites are the part of eggs that make cakes cakey...

 Posted Apr 10, 2006 by Aurora The ginger biscuit recipe I use contains a whole beaten egg. The biscuits it makes are chewy, but they're definitely still biscuits and not cakes or buns.
