We used to make this at home  But we would add a drop or two of food colouring to the sugar and mix it in well before adding the acid and bicarb.

Rats, I never thought of that - the sugar will absorb the water from the dye and stop the reaction starting to early!
Amazing how obvious these things are in hindsight - thanks fatkelli
