Hmmm...every Easter here at Greece (which I prefer than christmass) we pick (all Greeks pick) a young healthy sheep.
The butcher,not us,takes the wool off and the offal. Then as it is we put a big thick metal stick up its ar*e all the way up to its mouth. Fill its stomach with salt,lemon,oregano,peper and place it over a fire.
You can only cook sheep that way in an open space which is ok because greek spring is very mild. Someone has to roll that stick continiously so that the sheep gets cooked all around. But everyone enjoys it. And...
It's the best way to cook it.I love it even if it seems like a very canibalistic action. Thanks god for cooked sheeps!!!!!!!!!!
