Apparently batches of Cheddar Cheese is being matured in the traditional way - in a cave at Cheddar Gorge - for the first time in a century. This maturuing process fell victim to cost-cutting andgrowing demand in the early 20th Century. (Cheese was first matured in this way as long as 1000 years ago).
However, growing consumer demand for quality food has encouraged the Cheddar Gorge Cheese Co to begin cave-maturation once again, in Gough's Cave.
Apparently, the distinctive flavour of traditional Cheddar Cheese owes much to the air in the caves.
The Cheddar Gorge Cheese Co produces about 60 tons of Cheddar a year, which is 0.03% of the total UK Cheddar market.
