|  Posted Oct 9, 2002 by Rhatphase: Master of classical painting on alternate mondays between the hours of 2 and 4 pm by appointment only Ah lunch, the meal that I am most likely skip due to an overcrowded schedule. However, on the occasions I do have a packed lunch, I go all out. There are times in the overly wet state of Washington where you just need a little sun, this is not possible on most days so I make the best of it by having a lunch with a Mediterranian flair. Hummos and flat bread form the base here and I often add some Greek olives and cucumbers for crunch and color. Onions (red) are alos good here and a fruit in season compleats the lunch. For those of you wanting the complete package use fresh figs when they are available.
Now don't get me wrong, I enjoy a good sandwich now and again and there are several varieties that I enjoy a little too much. One involves taking leftover roast pork (thinly sliced)adding to it a little gruyere cheese, fresh spinich, roasted red peppers, and a mustard vinigarette. Tis most wonderful on thick foccia bread or a baguette.
Note to self: Stop now before i become too hungry and devour the computer.

So here is the lunch that would make me happy....
A punnet of hummos A small tin of fish, say sardines (but not tuna) in a jalapeno Tobasco-inspired tomato sauce Some mediterranean salad (onion, tomato, cucumber, olives) doused in a saucy vinaigrette dressing. A few sticks of biltong, or dried wors A packet of dry roasted peanuts.
A piece of fruit (an apple a day keeps the doctor away)
A drink (a Corona would make me happy, but a half-litre of water should fill the need)

We did? I didn't mean to ban dairy and gluten products, I just thought that people should consider the alternatives to these. I thought it would make for a more interesting packed lunch as well as one more accessible for those with allergies.

But the revised intro asks what kind of bread to use ... it is a sort of goal-post shift which had an influence on my submission. I would have suggested a couple of rounds of strong cheddar on granary bread with real butter, cucumber, tomato, onion, half a jar of Branston (not own brand) pickle and liberal use of salt and pepper. It's a large and juicy sarnie.
My other effort was a gluten/dairy free effort which now seems rather 'fruitless'.

Please contribute both! I thought you meant I said one thing and then then later, I changed my mind and suggested something else. I posted both the 'tell us what type of bread to use' idea and the 'gluten and dairy free' idea at the same time. The topic is to do with packed lunches, the suggestions should be triggers, but if you think of anything else that I've left out then I'd be glad to hear them
