Try baking this delicious Marmalade Cake. Recipe devised by Kate Morris and Sally Brown.
What to do:
Before cooking, wash your hands and put on an apron.
Weigh and measure the ingredients.
Brush some oil inside a loaf tin and place it onto a baking tray.
Start by putting the flour and butter together in a bowl and rub them together with your fingers. Just imagine you are tickling the ingredients.
Add the caster sugar and mixed spice to the flour. Stir well with the fork. This is your dry bowl.
Measure a heaped tablespoon of marmalade, and put it into a clean bowl. Add the orange juice, raisins and 1 tbsp of milk, mix well with the fork. This is your wet bowl.
Pour the wet mixture into the dry bowl and stir until there is no dry mixture to be seen. (It should be a soft mixture) Add a little more milk if it's too dry.
Use a tablespoon and teaspoon to put the mixture into the prepared loaf tin, a spatula will help you get all the mixture out! Sprinkle the top of the cake with the demerara sugar.
You will need to ask a grown-up to help with this part. Place in a pre-heated oven at 160°C (fan oven)/180 ºC/ Gas 4 for 30-35 minutes or until risen and golden. Leave to cool before removing from the tin and cutting.
Try serving with orange segments.
You will need:
- vegetable oil
- 100g self raising flour
- 50g soft butter
- 50g caster sugar
- ½ tsp of mixed spice
- 1 generous tbsp marmalade
- 1 tbsp orange juice
- 50g (2 heap tbsp) raisins or sultanas
- 1-2 tbsp milk
- 1 tbsp demerara sugar
