Funky Beet Muffins

Beetroot Muffins on a plate

Recipe by Neil Strawson, Richard Hunt, Kate Morris, Sally Brown. Makes 6 large to share 1/2 each.

You will need:

  • 1 egg
  • 50ml vegetable oil
  • 3 dsp (30ml) orange juice
  • 100g cooked beetroot
  • 100g wholemeal flour
  • 1 tsp baking powder
  • 3 tbsp (40g) caster sugar
  • 50g sunflower seeds
  • 1 tsp mixed spice
  • Work mat
  • Weighing scales
  • Kitchen paper
  • 2 mixing bowls
  • Whisk
  • Grater
  • Fork
  • Tablespoon
  • Dessert spoon
  • Teaspoon
  • Muffin tin and paper cases
  • Oven gloves (adult use only)

What to do:

Step 1

Before making, wash your hands and put an apron on. Weigh or measure all of the ingredients and ask a grown up to pre-heat an oven to 160°C (fan) / 180°C / gas mark 4. Put paper cases in the muffin tin holes. Pat the cooked beetroot dry with kitchen paper.

Step 2

The first mixing bowl is going to be your wet bowl. First, crack the egg into the bowl. Then add the oil and the orange juice and use a whisk or fork to mix everything together.

Step 3

Grate the beetroot next, using the fork to scrape any left over beetroot out of the grater. Then add the grated beetroot to the wet bowl and put to one side.

Step 4

The second mixing bowl is going to be your dry bowl. Add the flour, one teaspoon of baking powder, the caster sugar, the sunflower seeds and one teaspoon of mixed spice. Once you’ve added all of these ingredients, give your mixture a good stir and watch the mixture turn pink.

Step 5

Now add the wet bowl to the dry bowl using a tablespoon, and mix everything together until there are no dry bits.

Step 6

Finally use the two spoon method to put the mixture into the paper cases. Once all of the mixture is in the cases, ask a grown up to put the muffin tin in a pre-heated oven for 20 – 25 minutes until cooked. (If you make them mini muffin size, they will cook quicker.)
