Freewheeling Fruit Fingers
Recipe by Sally Brown and Kate Morris. Makes 4
You will need:
- 1 small eating apple (approx 30g when grated)
- 30g mixed dried fruit
- 3 tablespoons apple juice
- 1 teaspoon oil
- 1 dessertspoon demerara sugar
- 50g oats
- Cooking oil for loaf tin
- Work mat
- Weighing scales
- Mixing bowl
- Small loaf tin
- Baking tray
- Pastry brush
- Table knife
- Oven gloves (adult use only)

What to do:
Before making, wash your hands and put an apron on. Weigh or measure all of the ingredients. Wash the apple in water. Ask a grown up to heat an oven to 180°C fan/200°C/Gas 6
Using a grater, grate the whole apple. Use a fork to scrape out any left over apple out of the grater and put it all into the mixing bowl (You should have about 30g of grated apple.)
Add the mixed dried fruit and the oats to the grated apple and stir. Now pat flat a dessertspoon of sugar and add to the mixing bowl too.
Next, use a tablespoon to tip and load 3 tablespoons of apple juice into the mixing bowl followed by one teaspoon of oil. Give the bowl a big mix with a spoon.
Using a pastry brush, lightly brush the loaf tin with some oil so that the mixture doesn’t stick to it.
Finally, use a spoon to scoop the mixture out of the mixing bowl and into the loaf tin. You can use the back of the spoon to help squash the mixture into the corners.
Put the loaf tin onto a baking tray and then ask a grown up put it into the preheated oven for 25 minutes, or until its golden brown. Leave it to cool in the tin, turn it out and slice it into four fingers with a table knife.
