Makes 4 Boreks (Katy made 2). Recipe devised by Kate Morris and Sally Brown.
You will need:
- 100g feta cheese
- Black pepper
- 1 heaped tsp (5–10g) raisins or sultanas
- 20g flat leaf parsley
- 4 sheets of filo pastry
- 50g melted butter (ask a grown up to melt it for you).
Remember to ask a Grown-up for help.
What to do:
Before cooking, wash your hands and put on an apron.
Weigh and measure the ingredients.
Using your fingers, crumble the feta cheese in to a bowl.
Season with pepper. Add the raisins and stir together with a spoon.
Twist all the long stalks off the parsley and chop it up with the scissors in a cup. Add to the bowl of cheese and raisins and mix.
Ask a grown up to help you melt the butter. Take 1 piece of filo pastry and brush some melted butter on one side, then fold it in half lengthways.
Put 2–3 heaped teaspoons of filling at one end and start to fold in triangles, buttering the pastry as you go. Place on the baking tray with the last fold at the bottom. Continue until all the filling is used – you should make 4 Boreks.
You will need to ask a grown up to help you with this part. Bake in a pre-heated oven 180°C fan/200°C/ Gas 5 for about 20 minutes or until crisp and golden.
Try serving with a mixed salad.
