Presenter Caroline Nolan meets Professor Valerie Hall at her cottage in the small town of Ballyhalbert on the east coast of Northern Ireland.
They look at the agricultural techniques and traditions which were prevalent in medieval times and their effect on the landscape, in particular the way in which farmers in Gaelic Ireland created farmland and managed livestock.
Extensive dairy produce would lead to a rise in Irish cheesemaking, but a lot of these traditions along with the whole Gaelic Ireland way of life were about to fragment or disappear completely with the Flight of the Earls and the looming Plantation of Ulster in the early 17th century.
