Your beetroot recipes?

British beetroots are good for us - they're a 'super food', so I've been told. They contain betalins and are nutritious, even if they're not everyone's favourite vegetable.

So, as seen on The One Show, the recipe for, um, alcoholic beetroot cocktail is as follows:


Ingredients
1 small uncooked beetroot, peeled, cut into cubes
½ lime, juice only
25ml/1fl oz gold tequila
12ml/½fl oz orange liqueur
12ml/½fl oz dark chocolate liqueur
25ml/1fl oz beetroot juice
1 tsp sugar syrup (also known as 'gomme' syrup)
salt, for dipping

Method
1. Place the beetroot into a cocktail shaker and mash (muddle) with the end of a clean rolling pin.
2. Add the lime, tequila, orange liqueur, dark chocolate liqueur, beetroot juice and sugar syrup, top up with ice and shake well.
3. Wet the rim of a glass, then dip into a plate covered in salt to coat the rim.
4. Strain the cocktail into a glass and serve.

Put all ingredients in a blender, and blend for 20 seconds:

 

1 and a half chopped bananas
250ml apple juice 
150 ml beetroot juice
2 teaspoons of honey

    Fine Jullienne or Grated Fresh beetroot - 2cups
    Seasme seeds - toasted are best 2tbsp

    Vinegarette dressing:
    1 part Oil - 2tbsp
    1 part Vinegar - 2tbsp
    french grain mustard - 1/2 tsp
    garlic if desireds

    mix, chill, shake and serve

    This is really simply and lovely for children. You simply grate raw beetroot into uncooked rice and cook them together. Of course this makes the rice pink and the vegtable invisible! I sometimes add a few cloves of garlic and a knob of butter.

    Delicious with all fish, but especially mackerel.

    Slice baby beets and mix with sour cream and chives.

    I started putting it in everything and discovered a way of getting small girls to eat veg. I discovered that if you put a lot of beetroot in a vegetable pie it turns the pastry pink. Very useful when little girls are going through the 'pink phase'!!

    I'm unable to put the link here but in a search for Beetroot Recipes (UK) it's the first one that comes up. Beetroot smoothie isn't on that site but I searched and found it on another one.

    chocolate beetroot cake
    8oz S.R. Flour
    8oz soft marg
    8oz caster sugar
    4 eggs
    1oz coco powder
    1 large uncooked beetroot grated

    bake the same as any other sponge cake

    Methods to combat high blood pressure should include healthy eating and beetroot are a good vegetable. I think it unreasonable to expect that you can effectively lower you blood pressure simply by drinking a lot of beetroot juice. More effective lifestyle changes such as reducing salt and increasing excercise as well as continuing with prescribed medicines will result in better results.
